After a week in San Francisco, I am finally back on the East Coast. Standing on my feet for 12 hours everyday means that my whole body is extremely grateful for the fact that I am lying in bed right now watching The Help.

I decided to trek down to Charlottesville on Saturday to visit Cainon. We made some comforting soup late last night for dinner. The sausage and chipotle chilis add heat and great flavor.

Kale & Sausage Soup

  • 1 leek, chopped
  • 1 onion, diced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 package ground pork sausage
  • 3 chipotle chilis in adobo, chopped, along with 1tbsp sauce from the can
  • 2 boxes of chicken stock
  • 1 can of diced tomatoes
  • 2 15 oz cans cannellini beans, drained and rinsed
  • 1 bunch red kale, stems removed

Saute the leeks and onions with the olive oil on medium heat until translucent. Brown the meat and drain off the excess fat. We ended up using half a package of pork sausage and a whole package of seasoned ground turkey. Add the dried thyme and chipotle chilis and sauce. Mix together for a few minutes.

Add the stock and bring to a simmer. I let everything simmer together at this point for about 10 minutes. Add the tomatoes and beans, simmer for another few minutes. Chop up the kale into  about 2 inch sized pieces; add to soup and let wilt. YUM.
